Very Berry Blueberry Cake With White Chocolate Frosting

  • 3 1/2 cups cake flour
  • 2 teaspoons vanilla
  • 1 1/2 teaspoons baking soda
  • 2 tablespoons strawberry liqueur (juice)
  • 1/2 teaspoon salt
  • 1/4 teaspoon red food coloring
  • 1 teaspoon baking powder
  • 1 cup buttermilk
  • 2 cups sugar
  • 2/3 cup diced strawberries
  • 1 cup solid vegetable shortening
  • 1 cup Georgia blueberries
  • 6 eggs

Heat oven to 325 degrees.  Coat 4 cake pans with cooking spray and dust with flour.

Sift flour, baking soda, salt, and baking powder into a bowl; set aside.  Beat sugar and shortening until fluffy.  Add eggs one at a time; beating after each addition.  Add vanilla, strawberry liqueur, and red food coloring.  Beat in flour mixture, alternating with buttermilk, ending with flour.  Stir in diced strawberries.

Spread cake mixture evenly into prepared pans.  Place 1/4 cup of Georgia blueberries on top of mixture in each pan.  Georgia blueberries will drop down as cake bakes.  Bake 25 to 30 minutes.  Cool in pans for 10 minutes.

Georgia Blueberry Mixture for Filling

  • 1 1/2 cups Georgia blueberries
  • 1/2 cup water
  • 1 cup sugar
  • 2 tablespoons corn starch
  • 1 teaspoon red food coloring
Directions:Put ingredients in saucepan and cook on medium heat, stirring until thick.  Remove from heat and cool.


  • 1 stick butter, softened
  • 1 teaspoon vanilla flavoring
  • 2-lb. bag of 4x powdered sugar
  • 1/4 to 1/2 cup of milk
  • 1 10-oz. container of white chocolate frosting
Directions:On bottom layer, spread thin layer of cooked Georgia blueberries and thin layer of frosting.  Continue stacking each layer.  Frost sides and top of cake.  Refrigerate one hour and garnish with fresh Georgia blueberries and strawberries.
