April 22nd is Earth Day!  What better way to celebrate than to spend some time outside? My family has been enjoying the outdoors so much the last couple of weeks.  We love to bike, hike, picnic and visit the local farmer’s markets to pick up some local treats.

Pork Tenderloin with Apple-Blueberry Sauce

The idea behind this flavor combination came from the notion that pork blends well with apples and onions.  This is a healthy alternative to chicken and can help you avoid the “mom, not chicken again!” moans and groans.  Also, since the meal doesn’t require any fancy-schmancy ingredients, you’re likely to have everything you need on-hand.   The sauce is simple enough that even the pickiest palates will be happy with dinner.

This is by far my favorite savory blueberry dish.  It is so good, I could eat it once a week and it is so easy to make.  Since it is such a fast meal, it is a fabulous weeknight recipe for when dinnertime needs to happen in a flash.

Its summer time and here in Georgia it is HOT.  When I mean hot, I mean the other day my car said it was 113 degrees!   And, I don’t know about you, but when it gets this hot the last thing I want to do is stand over the stove for very long.

So, I’ve got just the thing… quick fish.  That’s right, fish.  It cooks up fast and with this super simple Georgia blueberry and mandarin orange salsa it is the perfect light dish for summer time.  {I like to keep it light when the temperatures begin to rise}.

A Day at the Blueberry Farm

Have you gotten your fill of Georgia Blueberries yet?  We haven’t!  Last weekend we went to pick a few at our local u-pick blueberry farm in Lafayette, Georgia.  They have a large field of blueberry bushes (more like trees!) to pick from.

Our First Big Harvest: Georgia Blueberries!

Judah and I had a nice surprise this week.  Our little blueberry bush (the one in my very first post here at the Georgia Blueberry site) was loaded with blueberries!  We picked about 2 cups worth off of our little bush!
